This is a super healthy, quick summery meal.
Cucumber and Tuna Pitas

2 t. poppyseeds
3 T. rice vinegar
1 T. sugar
2 T. olive oil
2 cucumbers, halved lengthwise and sliced
3 celery stalks, diced
2 cans tuna

In medium bowl stir together poppyseeds, vinegar, sugar and oil. Add cucumbers, celery and tuna. Season with salt and pepper. Toss well to coat. Stuff mixture into pitas. Easy, right?!
