roasted asparagus pasta

Pasta is a definite staple at our house. It's a great way to use fresh vegetables and it's really inexpensive. I had everything for this pasta in my pantry except the asparagus... see? Super cheap!



Roasted Asparagus Pasta

Ingredients:

1 lb. pasta
1 lb. asparagus spears 
1 T. olive oil 
3/4 t. salt
1/2 t. pepper
1/2 cup balsamic vinegar 
1 t. brown sugar 
4 T. butter
1/2 cup Parmesan cheese 

Directions: 

Cook pasta according to package directions. Meanwhile, cut asparagus into 1 inch spears. Toss with olive oil, salt and pepper on a baking sheet. Bake at 400 degrees for 10-12 minutes. Set aside. Put balsamic vinegar in a saucepan over medium heat. Let simmer for 5-10 minutes. Remove from heat and add brown sugar. Combine the cooked pasta, asparagus, vinegar. Add butter and cheese and mix until melted & combined. Serve warm.

Yum, roasted asparagus and pasta is one of my favourite combinations. I like to add roasted mushrooms too.
