Something strange happened during my pregnancy.
I started to like breakfast food. Not that I hated it, but I never craved it. But that all changed. I wanted pancakes A LOT. These cornmeal ones were a definite favorite.
Cornmeal Pancakes
Ingredients:
1/2 cup whole wheat flour
1/2 cup flour
1/2 cup cornmeal
2 T. sugar
1 1/4 t. baking powder
1/2 t. baking soda
1 t. salt
1 1/2 cups buttermilk
1/4 cup milk
3 T. butter, melted & cooled
1 egg, beaten
Directions:
Whisk flours, cornmeal, sugar, baking powder, baking soda and salt in a medium bowl. Set aside. In another bowl whisk buttermilk, milk, butter & egg. Combine the wet & dry ingredients with a whisk. Heat your skillet or griddle to medium heat. Grease with butter. Spoon batter by 1/3 cup. Cook for 3-4 minutes then flip and cook for an additional 2 minutes.
Berry Maple Syrup

Heat 1 cup maple syrup in a saucepan over medium heat until reduced by half {10-12 minutes}. Add one cup mixed berries. Reduce heat to low and let simmer 3-5 minutes. Take off heat and let sit for 20 minutes.
