It's no secret, I love chocolate. I love chocolate with chocolate.
Enter Double Chocolate Cookies:
Ingredients:
20 ounces semisweet chocolate chips/chunks
4 T. unsalted butter
2/3 cup flour
1/2 t. baking powder
1/2 t. salt
2 eggs
3/4 cup packed brown sugar
1 t. vanilla
Directions:
Heat oven to 350. Melt one cup of chocolate chips and butter together in the microwave, heating in 20 second increments. Don't over heat! Set aside. In another small bowl, mix flour, baking powder and salt. In a mixing bowl beat eggs, brown sugar and vanilla on high speed until light, 3-5 minutes. Reduce speed to low and add in melted chocolate. Add flour mixture and stir until combined. Add remaining chocolate chips/chunks. Drop dough by heaping tablespoons on parchment lined baking sheet, about 2 inches apart. Bake for 12 minutes. Let cool on cookie sheet for 10 minutes before transferring to wire rack.
These look like thin, crunchy cookies but they are surprisingly soft and chewy! Enjoy!
