corn muffins

These have to be the best corn muffins I have ever had. Seriously. No need for butter, no need for honey. They are perfect just the way they are!

Corn Muffins
{adapted from Martha Stewart}

1 cup plus 2 T. yellow cornmeal
1 cup flour
2/3 cup sugar
1 T. baking powder
1 1/4 t. coarse salt
1/4 cup canola oil
4 T. unsalted butter, melted
2 T. honey
2 large eggs
1 cup milk


Heat oven to 350. Put liners in your  muffin tin. In medium-sized bowl, mix cornmeal, flour, sugar, baking powder and salt. In separate bowl combine oil, butter, honey, eggs and milk. Combine the flour mixture and the oil mixture, whisk until combined. Divide batter evenly among muffin cups. Bake for 18 minutes.
