I LOVE this hummus. It's my favorite.... much better than all the store-bought versions I've tried.
adapted slightly from this recipe
1 can garbanzo beans
zest and juice of 1 lemon
1/3 cup fresh parsley, or 1 t. dried
1 garlic clove
1/4 t. coarse salt
1/4 cup olive oil
Blend, then use it on crackers, veggies, bread... you really can't go wrong.
