simple sugar cookies

Sugar cookies are one of my husbands favorites, and he LOVED these. I love fancy frosted sugar cookies as much as the next person, but these are a great simple alternative. 


Simple Sugar Cookies
makes about 2 dozen

Ingredients:

2 cups flour
1/2 t. baking soda
1/4 t. salt
1/2 cup butter, softened 
1/2 cup canola oil
1/2 cup sugar {plus some to sprinkle the tops}
1/2 cup powdered sugar
1 egg
2 t. vanilla

Directions:

Preheat your oven to 350. Line two cookie sheets with parchment. In a medium bowl whisk flour, baking soda and salt. Set aside. In a large bowl, beat butter until smooth {about a minute}. Add oil and beat until it is incorporated. Add sugars, blend well. Add egg, blend well. Add vanilla, blend well. With the mixer on low, add the flour mixture. Stick the dough in your freezer for 15-20 minutes. Then, drop dough by the spoonful on the pan, making sure the dough balls are at least 2 inches apart. Press the tops of each cookie down a little bit and sprinkle with sugar. Bake for 8-10 minutes. Let sit on the cookie sheet for another 8-10 minutes before transferring to a wire rack to cool.
