A few weeks ago we went to a friends house for dinner. She served this dish and I knew I needed the recipe for myself. It was SO good and surprisingly easy to make. I was surprised when she said the rice was made with coconut milk, because usually I don't like coconut... but this dish was amazing.
Coconut Rice
2 cups water
1 can coconut milk
1/2 cup sugar
1/2 t. salt
2 cups basmati or jasmine rice
Whisk the first four ingredients together in a pot, bring to a boil. Add rice and simmer for 15-20 minutes.
Ginger Chicken
3-4 chicken breasts
1/2 cup brown sugar
1/3 cup soy sauce
3 cloves garlic, minced
fresh ginger, shaved
Combine everything in your crock pot and let cook on low for 8 hours. Shred the chicken halfway through the cooking time. Serve over the coconut rice.
