Mmm... muffins!
We've been hibernating a little more than usual lately with the cold temps and ice forming outside our house, which means I've been baking. Yesterday I made these yummy muffins and wanted to share with you!
for the topping:
1/4 cup brown sugar
3 T. flour
2 T. butter, melted
1/2 t. cinnamon
Mix it all together until it's looking crumbly. Set aside.
for the muffins:
3/4 cup brown sugar, packed
1/3 cup oil or applesauce
1 egg
1/2 cup buttermilk {quick substiution: 1/2 cup milk + 1 T. lemon juice, let sit for 5 minutes}
1/2 t. baking soda
1/2 t. salt
1/2 t. vanilla
1 3/4 cups flour
1 cup apples, diced
Heat your oven to 325. In a large bowl, combine brown sugar, oil/applesauce and egg. In another bowl mix buttermilk, baking soda, salt & vanilla. Alternately add the flour and buttermilk mixture to the brown sugar mixture, combining after each addition. Gently fold in apples. Spoon the batter into lined muffin cups and sprinkle generously with the topping. Bake for 30 minutes.
