Sweet Corn Quesadillas
serves 4
8 flour tortillas
olive oil
1 1/2 cups monterey jack cheese, shredded
1/2 red onion, thinly sliced
2 cups corn
2 jalapenos, seeded & diced
1/2 cup fresh cilantro
Heat oven to 400 degrees. Brush one side of each tortilla. Mix all ingredients together and put in between tortillas. Bake for 6-8 minutes. Serve with sour cream & salsa.
Simple & delicious!
