rigatoni with sausage and zucchini



1 lb. whole wheat pasta
2 T. olive oil
1 lb. turkey kielbasa {Italian Sausage works, too}
1 1/2 T. minced garlic
1/2 red onion, chopped
3 small zucchini, sliced
salt & pepper to taste
1 cup Parmesan cheese


Cook pasta al dente. In a large skillet, heat the oil over medium-high heat. Cook the sausage, set aside. Cook garlic, onion & zucchini until just brown. Season with salt & pepper. Add sausage and heat through. Mix with pasta & add cheese.
