Lemon Herb-Crusted Salmon
adapted from Martha's recipe
1/4 cup bread crumbs
1/4 cup chopped parsley
1 T. olive oil plus 1 t.
1 1/2 - 2 lb. salmon fillet
2-4 T. dijon mustard
salt & pepper
2 lemons, quartered and seeds removed
Preheat oven to 475. Mix bread crumbs with parsley and 1 T. olive oil. Place salmon on parchment lined baking sheet. Spread evenly with mustard; season with salt & pepper. Sprinkle with bread crumb mixture, pating gently. Scatter lemons around salmon. Drizzle with remaining olive oil. Bake for 18-20 minutes. Salmon should break easily with a fork.
