This spaghetti was yummy! Even my husband, who usually isn’t a big fan, couldn’t get enough!

Ingredients:

4 T. olive oil

1 large onion, chopped

4 cloves garlic, finely chopped

28 oz. tomato sauce

1 T. sugar

1/2 cup grated Parmesan {plus more for serving}

2 T. fresh oregano, chopped

salt & pepper, to taste

1 egg

1 lb. ground beef or turkey

16 saltine crackers, finely crushed

12-16 oz. spaghetti

Directions:

Saute onion and 1/2 the garlic in 2 T. olive oil until onion is tender. Add tomato sauce, sugar, 1/2 the Parmesan, 1 T. oregano, salt and pepper and 1 1/2 cups water. Simmer for 30 minutes, stirring occasionally.

Meanwhile, mix beaten egg, meat, crackers and remaining cheese, garlic & oregano. Shape the mixture into meatballs. Heat the remaining olive oil in a skillet and cook the meatballs {I ended up breaking the meat up a little bit to help it cook faster}. Add the sauce and simmer for 25-30 minutes. Cook spaghetti according to package directions. Mix it all and serve!
